I think the second Building to the left was the remaining part of HK Hotel! Does anyone know what is the left most building? Oriental Hotel incl. HK Hotel’s Office? Old site of Keying House?

I believe the building in the centre is Union Building, so we are looking towards the harbour. The remaining part of the Hongkong Hotel would be the first building from the right.
There seem three buildings at the right , The first from Union Building should be Gloucester House, and HK Hotel should be the next. So how about the extreme right?
I'm not 100% sure, but I think that was also part of the Hong Kong Hotel. Different sections of the hotel were re-developed at different times, so it looked as though it was made up of several independent buildings.
The 1941 licensing sessions show it stilll occupied addresses on Pedder Street and Queen's Road Central then:

The China Directory of 1926 gives the address of C.E. Warren & Co. Ltd. as "China Building (Facing Queens Theatre). The 1930s ad for the company posted by IDJ shows the same address. Presumably the China Building was so well known there was no need to give the street and the number. Is it recorded at what number of Pedder Street the China Building was located at that time?

Annelise's 1901 map at http://gwulo.com/atom/12583 under the heading of "1939 Queen's Theatre" answers my question about the address of the China Building in 1930. It seems to be 29 Queen's Road Central (I.L. 2317) opposite the Queen’s Theatre in Theatre Lane, but also on the corner of Pedder Street and next to the Pedder Building - that's if the Queen's Road numbering stayed the same till 1930.

The address of the present-day China Building is also 29 QRC, so it looks to have stayed constant since the 1901 map.
