Any idea if they were a regular feature of the hotel at that time, or there for a specific event?

I wondered if anyone would spot them!

I believe the Royal Corps of Transport (RCT) was holding its Summer Ball at the hotel that night. The horses were from 414 Pack Transport Troop RCT based at Lo Wu Camp.

To commemorate the disbandment of the last pack animal unit in the Army in 1975?

Years 1975 ~ 76 saw the departure and disbandment of numerous regiments and corps in Hong Kong.

It may well of been I'm not sure, the back of my photograph just says "Corps Summer Ball"

As far as I can remember 414 actually closed its gates in Feb 76 but of course that doesn't mean it was the official disbandment date.

 The water display in the foreground (turned off at the time of the photo) - multi-coloured fountains in ever-changing patterns. Something quite 'magic'.
