STAR FERRY-1945
Services resumed at 0630 on Friday 1 February 1946. The first postwar vehicular ferry left the island for Mongkok ten minutes earlier. From the book "Star Ferry " by David Johnson published in 1998 for the Star Ferry Company

I think cross harbour ferry services were maintaind during the Japanese Occupation on a limited scale. Some information on the subject can be gleaned here
re: Star Ferry 1945
A search for star ferry in the newspapers didn't turn up any mention of the service re-starting, but there was a report that "The star ferry was held up by a Police searching party at about 10pm on Thursday, [...]" on page 2 of the Hong Kong Sunday Herald, 13th Jan 1946, so it was running by then.
