The white house on the right looks pretty much like the Metropodle Hotel with the sign on the roof (unfortunately, can't read anything). Left of the hotel, two chimneys are visible. These can't belong to Taikoo Sugar - if so, they should be right of the hotel. Probably they belong to quarries located north of Taikoo Sugar.

On hkmaps.hk, the 1903.1 map shows water depths, pretty shallow like on the photo.

Tramway to sugar factory Hong Kong

Should be King's Road near Quarry Bay. The tram was single-tracked in these early days.

New Ritz Hotel / Showboat, North Point [????-????]

The New Ritz Hotel was designed by Su Gin Djih who was the architect for a number of buildings in the 1950s and 1960s including the New Ambassador Hotel in TST.   http://218.188.25.84/news_attach_file/41_04.pdf

 

 

according to 1958 Far Eastern Economic Review address was 893-899 King's Road.
